Sea bass with tomato, basil & olive
crust
This seasoned crust adds an added crunch to the sea bass.
Ingredients
4 sundried tomatoes
20g pack basil
6 pitted black olives
25g breadcrumbs
1 tablespoon olive oil
4 sea bass fillets, scaled keeping skin on
freshly ground black pepper
Method


  1. Preheat the oven to 180°C, 350°F, gas mark 4. Place all the ingredients, except the bass, into a food processor & blend to a paste.
  2. Spread this mixture onto the skin side of the bass fillets. Place the sea bass onto a baking tray, skin side up & cook for 30 - 35 minutes.
  3. Serve with crushed new potatoes.
