lightly spiced, delicate fish meal
Ingredients
4 medium sized sea bass
4 tomatoes, chopped
1 fennel, chopped
300ml coconut milk
1/2 tablespoon green Thai paste
squeeze of lemon
To serve:
chopped coriander
Method


  1. Preheat the oven to 220°C, 425°F, gas mark 7.
  2. Place each fish onto sheets of double foil. Top with the tomatoes & the fennel.
  3. Mix the green Thai paste with the coconut milk & good squeeze of lemon. Divide between the fish.
  4. Seal & cook each parcel in the oven for about 20 minutes, but check the fish depending on its size to see if it is cooked through.
  5. Open the foil parcels & top with chopped coriander. Serve.
