Chinese sea bass parcels
Sea bass with an oriental touch.
Ingredients
4 (175g) sea bass
4 tablespoons fresh ginger, thinly sliced into julienne strips
2 tablespoon lemon juice
16 Chinese lettuce leaves
2 tablespoon sesame oil
4 cloves garlic, thinly sliced
4 tablespoons soy sauce
2 tablespoon sesame seeds, toasted
4 spring onions, slice

Method


  1. Remove scales from sea bass, cut off gills, head & tail.
  2. Fillet the fish to remove the back bone but leaving the skin on. Cut the fillets into 2.
  3. Season the fish & sprinkle with fresh ginger strips & lemon juice.
  4. Wrap each piece of fish in a Chinese lettuce leaf.
  5. Steam the parcels, either in a bamboo steamer, or on a plate, placed over a pan of boiling water then covered with a saucepan lid, for 15-20 minutes.
  6. Fry the garlic slices in the sesame oil for 2-3 minutes.
  7. When the fish parcels are cooked, drizzle with soy sauce & scatter over the garlic slices, toasted sesame seeds & spring onions.
